In Moscow restaurants "Dodo Pizzas" a big pizza "Margarita" for delivery costs 625 rubles. Its size is 35 centimeters in diameter, weight is about 850 grams, it has approximately 1,500 kilocalories. Since we constantly carry out promotions and also offer discounts to our bonus program participants, the final selling price is usually lower than the full price - for example, in September it averaged 582 rubles.
After deducting the value-added tax from each pizza, we are left with 529 rubles of net revenue. The cost of ingredients and packaging is about 121 rubles, more than half of this is the cost of mozzarella cheese (we use high-quality cheese without vegetable fats), the rest is approximately equal: the cost of dough, tomato pizza sauce, fresh tomatoes and a pizza box. Total gross profit from one pizza is 408 rubles.
Of this money, we pay the labor of pizzeria workers and couriers, pay rent and utility bills, bank commissions, and invest in advertising. As a result, the profit of an average pizzeria before depreciation and taxes is approximately 15-20% of revenue. To determine prices, we analyze the market prices of competing chains and restaurants and the cost of the product. We strive to ensure that the cost of ingredients and packaging is in the range of 25-30% of the selling price - this allows us to provide customers with a quality product and service, pay market wages to employees and at the same time receive adequate profit.

On average, the market pizza margin is three to five times. In the case of “Margarita” in percent, it approximately looks like this: 30% - cost, 70% - margin.
The cost of any dish (and pizza is no exception) is the sum of the cost of its products. All products are processed upon arrival at the restaurant. Then, semi-finished products are prepared from them, which are already included in the composition of dishes. Each stage includes a certain percentage of waste, in some cases it can reach up to 70% of the initial weight of the product that comes to the restaurant, which, of course, increases the cost of the product that goes to the dish. As for pizza in our restaurants (il FORNO, Burger & Pizzetta, FORNETTO, Limonchino), we prepare the dough and all the sauces on the spot according to our recipes, so the cost of the classic Margarita pizza will consist of a dough for a serving, tomato sauce, cheese mozzarella and oregano seasonings. We work with trusted suppliers, monitor the quality of products and the price ratio of them, conduct blind tastings and do everything to ensure the quality of the dishes is at a high level, and our guests are always satisfied.

The cost of pizza consists of many factors - from the cost of the ingredients to the costs of the restaurant itself. This is logical, because the more expensive the raw materials, the more expensive the pizza - in principle, this applies to any dish. You must always remember that fairy tales and miracles do not happen, you will never get a decent dish from cheap low-quality products. Also, the cost includes payment to the personnel who are involved in the preparation.
We purchase many products, such as flour and tomatoes, for pizza in Europe. Russia does not yet process grain properly, but we really hope so, and tomatoes cannot be as juicy as in Italy, since we do not have the climate and conditions in which they should grow.
